Thoughtful, polite, and accommodating management. This is a position for the "professional" waiter. A high level of food and wine knowledge is expected. The only drawback is the fraction of tips you actually walk with as opposed to bringing in. It's a pooled house and nearly EVERYBODY gets a cut in the form of a check. If they ever changed their tip-out scale, this could be the best place in the city to work.

Casual fine-dining, down to earth staff. Everyone generally gets along well, which you can't put a price on.
